Who Doesn't Love Granola Bars?

Mmmmm ... granola bars. I love them, my kids love them and we go through them quickly.  I had always thought about making them, but the recipes I saw either seemed way to chunky and almondy (don't love almonds) or not enough surprises (I like chocolate and marshmallow bits what can I say?).

My friend Katie - mother of FOUR! by the way - slipped me this recipe (click link or see below) for home made granola bars while visiting last winter.

Mmmmm ... golden, toasted heaven!

These granola bars are so good. Just by tasting them you can tell they are much more healthy than the store-boughts, not to mention there is a sense of pride when you pull out home made bars for your kids ... and even better on a play date ;)

P.S. "Katie" also mentioned that she triples the recipe when she makes it and freezes what she doesn't need.


GRAINOLA BARS
(Canadian Family Winter 2012)


Ingredients:

2½ cups quick-cooking oats (not instant)
1 cup unsweetened shredded coconut
½ cup chopped raw almonds, pecans or pistachios
½ cup chopped dried cranberries
½ cup semi-sweet mini chocolate chips
⅓ cup whole wheat flour
¼ cup ground flaxseed
1 tsp cinnamon
½ tsp salt
¾ cup canned pure pumpkin (not pumpkin pie filling)
½ cup liquid honey
¼ cup butter, melted
1 tsp vanilla
Directions

1.Preheat oven to 350°F. Line a 9 x 13-inch baking pan with parchment paper, letting the paper overhang on two opposite sides (so you can use it as a sling to pick up the granola bars after baking).

2.Combine first 9 ingredients in a large bowl. Mix well. In a medium bowl, whisk together pumpkin, honey, butter and vanilla. Pour wet ingredients over dry ingredients. Mix using a wooden spoon until dry ingredients are coated with pumpkin mixture. Make sure there aren’t any dry oats in the bottom of the bowl! Stir, stir, stir!

3.Pour the wet granola mixture into the prepared pan and spread it evenly to the edges. Using your hand, press down firmly on the granola so that it’s tightly packed in the pan.

4.Bake on middle oven rack for about 25 minutes, until top turns a light golden brown and feels dry to touch. Remove pan from oven and cool completely on a wire rack. Lift cooled slab of granola from pan by holding on to parchment paper and transfer to a cutting board. Using a large, sharp knife, cut the granola into 16 bars, about 1½ x 4 inches each. (Tip: Press down with the knife to cut the bars and avoid a sawing motion.) Wrap bars tightly in plastic wrap and store in an airtight container, either at room temperature or in the fridge.

From A Mother To A Child

Thought I would share this ... I read it on my friend Kate's Facebook page recently and was really touched by it. I don't know who wrote it or where it came from.


Letter from a Mother to her child: 

"My dear child, the day you see I’m getting old, I ask you to please be patient, but most of all, try to understand what I’m going through. 

If when we talk, I repeat the same thing a thousand times, don’t interrupt to say: “You said the same thing a minute ago”... Just listen, please. Try to remember the times when you were little and I would read the same story night after night until you would fall asleep. 

When I don’t want to take a bath, don’t be mad and don’t embarrass me. Remember when I had to run after you making excuses and trying to get you to take a shower when you were just a child? 

When you see how ignorant I am when it comes to new technology, give me the time to learn and don’t look at me that way... remember, sweetheart, I patiently taught you how to do many things like eating appropriately, getting dressed, combing your hair and dealing with life’s issues every day.

The day you see I’m getting old, I ask you to please be patient, but most of all, try to understand what I’m going through. If I occasionaly lose track of what we’re talking about, give me the time to remember, and if I can’t, don’t be nervous, impatient or arrogant. Just know in your heart that the most important thing for me is to be with you. 

And when my old, tired legs don’t let me move as quickly as before, give me your hand the same way that I offered mine to you when you first walked. 

When those days come, don’t feel sad... just be with me, and understand me while I get to the end of my life with love. I’ll cherish and thank you for the gift of time and joy we shared. With a big smile and the huge love I’ve always had for you, I just want to say, I love you... my wonderful child. "

Having had a parent who was ill and slowed down sooner than they would have liked, I can tell you that having patience and perspective with ageing parents makes a world of difference and transforms those frustrating moments into tender bonding moments.

(it was originally a letter from Mother to daughter but I changed it to be to a child as I have two boys and thought it applied equally to both genders.)

Experiments with the Kids

My eldest son brought home a wonderful book last week from school that included all sorts of awesome experiments that can be done at home.



As you probably know first hand, usually such experiments or activities can require a lot of time, effort, ingredients and patience and they are tough for a wide range of ages. I was pleasantly surprised by this book and would recommend as a gift or library item in the future if you are looking for some fun and educational stuff to do (especially with March break coming).

Here is just a few of the things we did:

Change-A-Colour Celery

Simply add some celery to a glass of
water with some food colouring and wait for
it to change colour


Create-Your-Own Mould Ranch

Take some old, moist food and put it in a jar...

seal it up and wait for the mould to grow!


Green Goo

1 cup of corn starch and 1/2 cup of water
and a few drops of food colouring

Have fun!

He Knows What He Likes & It's Not What I'm Cooking

My youngest has a habit of dipping anything he is eating into anything he is drinking.  It makes for an interesting meal time and a gross cup clean out when all is said and done. I usually can't stand it after a few dunks and move his cup out of reach.

This week, he tried something new:  he decided to put everything on his plate into his bowl of yogurt that was also sitting on his plate.



The result:  A bowl of yogurt with a drizzle of honey, plus cucumbers, plus crackers, plus summer sausage slices.  Funny how he won't eat a meal I slave over that (in my opinion and everyone else's sitting at the table) is delicious, but that he will stomach through his above-mentioned combo without so much of one of his usual, "yuck!"s.

Anyhoo, hope you're enjoying a nice peaceful meal time today with all your little ones eating everything that is put in front of them.

Giving Thanks for Fruits & Vegetables


My husband and I had our first Thanksgiving at home, just us with our kids, in eight years.  We both have very large families and Thanksgiving traditions but for a variety of reasons, things were not as norm this year and we got to be at home. It was a nice change and we thoroughly enjoyed cooking our very first turkey.  Or rather, my husband cooked the turkey and did a PHENOMENAL job. Thank you Jamie Oliver for helping us out yet again.

To The Theatre!

My husband and I are about to embark on a theatrical experience like nothing we have seen before.

Not the classic style and tradition of The Nutcracker ballet ...

Not the energy and excitement of Radio City's Rockettes ...

and no, not the epic long Lord of the Rings .

Nope, the genre of live entertainment I am referring to needs its very own category, complete with energy levels through the roof, multiple bathroom breaks, volume adjustments and toddler hysteria. We are headed for  (drum roll please):

The Backyardigans  
Live at the Sony Centre in Toronto




Oh yeah baby! My boys and I are headed down for their first live show. Pretty exciting. Fingers crossed for my two year old. When we saw that they were coming to Toronto and factored in the slight Backyardigans craze that hums in our house thanks to Netflix's constant viewing, we took the leap and decided to go.

Anyone else been to a live show with their kids? Suggestions or advice?

Easy Pyjama Alteration

At the beginning of the summer I was faced with full drawers of pyjamas for both of my kids.  The problem:  all the pjs had long sleeves and pants and were not that appropriate for summer weather.  I was not very motivated to go spend a pile of money on summer pjs when I already had so many and that they would likely grow out of  by summer's end.


My solution:

And, with the help of a simple pair of kitchen scissors, the After looked like this:








Voila! Summer pyjamas in seconds. Who needs hems!?

(I know this post is a few months late in relevance, but thought I would share in hopes that come next June as the temperatures start to rise, you may remember my simple alteration and save yourself a few dollars and hours at the mall.)

Break up the Monotony with Spaghetti

Okay, so school is out, now what?

Days upon days with hours upon hours to fill with activities can be a bit daunting.

Or even if you are at home all of the time with younger kids, the park and the splash pad must be getting a bit old.

Well, the other day I was feeling the same way and decided to flip open one of the books I have that are packed with activities for kids.

This was the inspired result:






Yep, it cost all of about $1.49 for a super large bag of Catelli spaghetti noodles, boiled them up, cooled them off, and then dumped them in our kiddie pool. I then let the kids put a couple of buckets of water in with the spaghetti and they had a blast.

It turned a bit ugly at the end when I was trying to put an end to the activity when my eldest decided it would be fun to dump spaghetti all over my youngest's head ... but all in all, they had a great time - no injuries, lots of fun and totally occupied.

Notes:  I decided to do it on my patio because any spaghetti that did "escape" the pool would be dried out and easily swept the next day. I used a colander to gather up most of the noodles and then dumped the pool with the remaining noodles into one of my gardens in the back yard (do not let them put too much water in the pool or you won't be able to move it and you can't very well let out the water with all of the noodles floating around).

And lastly, yes those are circa 1980s WWF Wrestlers that you see in the pictures ... thank you to my in-laws for holding onto them all these years and graciously passing them down.  Nothing like Hulk Hogan, Macho Man and Andre the Giant to add some excitement to a kiddie pool filled with spaghetti!

Fairy Cakes for End-Of-School Festivities ... and Giveaway Reminder

It's the time of year when school is ending, summer is beginning and there are lots of celebrations - class parties, Canada Day, birthdays, bachelorettes, baby showers, 4th of July - and there is no better way to celebrate, in my opinion, than with a cupcake.  And we all know, nothing beats a really awesome cupcake Mmmmmmmmm ... (and nothing is worse than a really bad, dried out cupcake with gross icing).

So here it is, an awesome cupcake recipe for all those occasions, by Nigella Lawson.

(I used this same recipe to make cupcakes for my son's first birthday. You can search Nigella's site for icing or use your own.)

Animal-themed cupcakes for son's
1st Birthday
Nigella's Ultimate Fairy Cakes

Ingredients

    • 130g softened butter
    • 130g caster sugar
    • 2 eggs
    • 1 tsp vanilla extract
    • 130g self raising flour
    • 4 tbsp milk (any)

    Method

    Serves: 12
    1. Preheat the oven to 190C, 375F, gas mark 5.
    2. Cream together the butter and sugar until creamy and pale. In a separate bowl, whisk the eggs with the vanilla. Whisk into the butter and sugar mix.
    3. Sift half the flour in, and fold. Then add the milk and mix in well. Fold in the other half of the sifted flour.
    4. Spoon into the paper cases and put into the oven for about 25 - 30 mins until golden and crisp on top

    Guest Blogger: Disney World Survival Tips - Part 1

    As parents of young children, the topic of a Disney World vacation - the possibilities, the interest, the insanity - comes up.  I'm happy to welcome my friend Laura Lueloff as our guest blogger for today. She took a Disney vacation this spring and is anxious to share her experience with all of you. This is the first of her two-part post for us.

    Disney World: the Mecca of Fun

    “Disney is crazy”  “We are never going back”  “The line ups were insane”  “Our kids were cranky the entire time!” 





    This is just a sampling of some of the feedback I had heard from people over the years about their trips to the “mecca of fun!” - Walt Disney World ….

    Well, my family and I decided to take the plunge and just returned from our trip.  Not only did we survive, we loved it  and we are planning a 2nd trip for next spring!  Our week-long vacation went off without a single hitch and was a perfect trip. I thought I would share a few tips and tricks that helped make our time there so great….

    1.      Read, research, plan & prepare!
    • Think about the age & temperament of your kids and brainstorm what is best suited to them in terms of attractions, time lines, energy and patience levels
    Check out these helpful resources:

    2.      Be Sensible
    Disney is a Las Vegas-type experience for kids (grown ups too!)  and it’s easy to get carried away with all the things to see, experience and be part of.  "YOU CANNOT DO IT ALL! " should be your mantra.
    • Think about the most important attractions for your kids. What's worth the wait and what can you skip? -Be realistic about what you can accomplish in the time you have. Go into your days at the parks with a plan – it makes a huge difference! (We purchased a 2 day park pass just for Magic Kingdom -we could not “park hop” to other parks on those days-and decided 2 out of 6 days would be enough for us.)
    • We focused on the Magic Kingdom as this offered the most age appropriate options for the 6 and under age group.  The 3 other parks (Epcot, Hollywood Studios & Animal Kingdom) will be tackled on our next trip.Read the detailed descriptions of the parks, the attractions and the height restrictions and you’ll be able to make the best decision for your family

    3.      Take Breaks!
    • Would you go to a place like Canada’s Wonderland for 7 days straight, all day, every day, in extreme heat?  Now multiply that experience by 1000% in terms of crowds, parades, activities and rides! 
    • My advice:  do not go the parks on consecutive days with young kids.  They need a break and so do you!    Take a break in between park days – you might find your kids have just as much fun swimming & splashing – ours did!
    • Midday Breaks -In order to catch the evening parade and fireworks display, we took a siesta in the afternoon at the resort and went back at dinnertime.  It was worth it to watch them experience nighttime at Disney without any meltdowns!

    4.     Bring Your Own Food & Drinks
    • You will go through a security check before entering the parks and they check your bag thoroughly, but they do allow you to bring food and drinks in.  I brought a cooler in each day with nutritious snacks and basic lunch items and lots of water too!  the food in the parks is very expensive and your passes do NOT include food!  i.e  bottle of water = $3!

    5.      The early bird gets the worm….
    • Go to bed early, set your alarm and get to the park at least 30 minutes before it opens.  I am not exaggerating on this tip.  Find out when the park opens and be there before the gates open.  Within 1-2 hours of the opening time the most popular rides already had 30 -45 minute line ups
    • Reservations – if you are interested in any of the special character type meals (ie Cinderella’s castle) you must make your reservations about 6 months in advance.  No exaggeration here whatsoever.  If you change your mind you can always cancel, but if your little princess has her heart set on dining at the castle – 6 months out is the lead time!     6.      Celebrate something!
    • We arranged this trip for my son’s 6th birthday – something that none of us will ever forget!  Think of a milestone, a birthday, anniversary, graduation – anything that will make things even a little more magical while you are there.  Our son still thinks that the fireworks (best ever!) were specifically for his birthday – in our minds they were!
       
    7.      Strategic Souvenir Shopping
    • Everywhere you turn within a Disney park there is a store.  Some rides will end with you walking into a store – ridiculous!  We decided early on to not “give in” to the madness.  The entire city of Orlando revolves around Disney – even grocery stores carry Disney merchandise and the savings are huge.  Quick example – most character kids t-shirts at Disney cost about $20-$35 each – head to the WalMart Superstore and save at least 50%!

    A Mind Of His Own

    As many of you can relate, tis the season for mandatory hat and sunscreen wearing with the little ones.  Although we have multiple hats, sunglasses and sunscreen, it never fails that they end up left in the car, hidden in a bag, out on the laundry line to be dried etc. so when you go to retrieve one (or tell my son's to go to their basket and get a hat) there are often slim pickings.  This morning, this is what my youngest son chose ... no switch that ... insisted on:



    Now before anyone concludes that I am a delinquent Mom and was putting my son at risk of overheating in his wool tuque, the picture was taken at 8:30 in the morning and although a nice day, it was not yet hot enough to be an issue.  The afternoon's wardrobe choice - when it was a lot warmer - was a much cooler choice ... a baseball hat ;)

    Practical & Cute Snack Bags

    I recently happened upon these super cute snack bags/pouches made by Greenalicious Bags.

    I was struck by these bags because of their really cute designs. After speaking to Laurie-Ann, the woman behind Greenalicous bags, I learned that they are all made out of reused kids clothes (hence the cute designs, jean pockets and zippers) and lined with organic cotton. They are ideal for holding food in lunch bags, snack pouches in back packs or as I do for myself, as a wallet.  And they are VERY reasonably priced.

    Lice Lice Go Away!

    I have been fortunate thus far (knock on wood) that my children have not gotten lice. And come to think of it, I never got it as a kid either.

    Talk to any parent who has gone through the experience though and you will know - it's absolutely HORRIBLE. The pesky little bugs jump from family member to family member and just don't want to go away and the products that are usually used to terminate the little suckers are very nasty.

    Friday's Controversial Read

    I'm not sure how I came across this article yesterday, but wanted to share it with you.  It's a very controversial story about a family that has decided to raise a "genderless" child.  This does not mean that the child does not have a gender - they definitely have all of the parts of male or female - the parents are just choosing to withhold the gender from anyone but themselves, allowing the child to be free of all of the gender stereotypes and pressures they feel exist in the world. 

    It's definitely an interesting story and one that caused a lot of strong emotions to surface within me.  I'm not going to share my opinion on this before you all get to read it.

    Edible Easter Nests (by Nigella Lawson)

    This is a super fun, not bad tasting and really cute sweet to make with the kids at Easter/spring time.  The recipe - Easter Nests - is by Nigella Lawson and can be found in her Domestic Goddess book.  They look like macaroons, but are not.

    Basically the recipe is consists of:  

    Chocolate


     + Shredded Wheat



    + Mini Eggs


    ... and voila - the cutest little Easter nests!



    The recipe:

    Easter Nests
    (From Nigella's Domestic Goddess book):

    This makes 5 nests, so increase as needed.
    7 oz milk chocolate
    1 oz bittersweet chocolate
    2 tbsp unsalted butter
    4 oz shredded wheat
    about 25 mini eggs for decoration
    1 baking sheet, lined with oiled foil

    Melt the chocolate in the microwave for about 2 minutes.  Crumble the shredded wheat into it and mix.  Form a nest shape about 3 inches in diameter, don't worry if it doesn't look like it will stick together, it will as it cools.  Leave to cool until set, then fill the centre with the mini-eggs -about 5 per nest.

    Backyardigan Mania

    Yesterday I posted about successful shoe purchases, today it's the Backyardigans ... welcome to the polar opposites of my life (note that these swings happen on a minute to minute basis).






    My eldest is into the Backyardigans in a big way right now.  Fortunately? we have Netflix so we can just pull them up whenever we are watching television. This is very handy given the fact that on Treehouse's last programming switch they are only viewable occasionally quite late in the evening and at 4:30 in the morning. Much as I love my son and the singing quintet, there ain't no way we're getting up at that hour for some imagination and singing, especially when my household just began to sleep (relatively) through the night!

    I must say, out of all of the kids shows out there, the Backyardigans are one of my favorites.  there's music, imagination, friendship, all different types of adventure and of course snack time.  My son's favorite character is Tyrone, but he insists it is pronounced "Kyrone" and will argue with you until you give up.  His second favorite is Tasha who he insists is his "wifey" and "princess."  He lights up when he talks about her, it is quite funny and cute.

    Another favorite for months was Max & Ruby and Zoboomafoo. If you haven't checked out Zoboomafoo, I highly recommend it, even for older kids - very educational, non-cartoon, fun and one that adults can easily watch as well.

    We're Leaving On A Jet Plane

    Next week, my husband and I are leaving for a couple of days - first multi-day trip away from the kids together.

    It's crazy the mixed emotions I have.

    Up until this week, I was super excited. Now the "missing the kids" feelings are creeping in accompanied with worry and fear at having them out of my sight and control for so long.

    I am, however, looking forward to a non-kids airport experience and no curfew. we have even booked a massage and might even squeeze in a movie. I know the movie part seems a bit silly, but it's something we used to do all of the time and that we loved doing before we had kids and we just don't seem to get out to them anymore. And no, Caillou does not have a new big-screen feature out right now, so we'll be happy to settle for Matt Damon!
